This salad combines lightly fried vegetables with fresh lettuce. Ingredients are combined with classical light dressing and pine nuts taste complete chord and add the salad nutrition. The dish is perfect for vegetable and vegetarian table. I hope you like it.
Ingredients:
- Zucchini – 300 g
- Paprika – 1 pc.
- Vegetable oil – 20 ml
- Romaine lettuce – 100 g
- Cedar oil – 40 ml
- Lemon juice – 20 ml
- Ground black pepper – 1/4 tsp.
- Salt – 1/4 tsp.
- Provencal herbs – 1/2 tsp.
- Honey – 10 g
- Pine nuts – 50 g
Directions:
- Zucchini cut into circles 0.5-0.7 cm thick and cut pepper into stripes. Lightly fry vegetables in your favorite vegetable oil. We offer to take pine nut oil. Wash and dry lettuce; tear not too small. Add roasted vegetables. Put cedar oil, ground black pepper, provencal herbs, lemon juice, salt and honey into bowl and beat it with a fork to obtain an emulsion. Season the salad and toss. Fry in a dry pan a handful of pine nuts stirring until it flush. Cooked salad sprinkle with nuts and serve. You can eat it warm or cool.
