Red lentils fall apart quickly that’s why lentil soup cooks not so long as from other legumes. It contains a lot of protein and has a beautiful rich color.
Ingredients for Lentil Soup:
- Onions – 1 pc.
- Vegetable oil – 40 ml
- Carrots – 200 g
- Leek – 1 pc.
- Red lentils – 200 g
- Salt – 1 tsp.
Directions :
- Cut onions into rings and fry in a little oil. Add the grated on a coarse grater carrots and cook for another 2-3 minutes. Cut into thin rings white part of leek, add to the pan and cook vegetables about 5-7 minutes until tender occasionally stirring. Boil 2l of water. Put there vegetables and bring it to a boil. Add lentils, salt and cook for 15 minutes over medium heat. The soup is cooked when the lentil become soft. Serve hot lentil soup with fresh bread, toast or pastries.
