A variety of vegetables are an indispensable component of Armenian cuisine. Salad of eggplant and tomatoes is so delicious that you’ll want to cook it more and more. Fortunately, the salad is quite simple.
Ingredients :
• Eggplants – 300 g
• Salt – 1 tsp.
• Onions – 200 g
• Vegetable oil – 60 ml
• Vinegar – 20 ml
• Tomatoes – 300 g
• Ground black pepper – 1/4 tsp.
• Fresh green basil – 20 g
Directions:
- Peel eggplant and cut into circles 1-1.5 cm thick. You can pot eggplant on salted water for 10-15 minutes and it wouldn’t be bitter. Cut onions into rings. Fry eggplant and onions in vegetable oil until golden brown. Put roasted vegetables in a bowl, add chopped tomatoes, salt, pepper and vinegar. Mix it well. Add to the salad finally chopped greens – parsley, cilantro or basil. Basil fits into the harmony of flavors of this salad.
