Eggplant Tart recipe

Savory snack tart requires minimum attention. The most difficult operation is to peel and chop roasted vegetables. Therefore, this recipe can be recommended for novice cooks or as a beautiful addition to the holiday table.

Ingredients for Eggplant Tart:
  • Eggplants – 700 g
  • Paprika – 2 pcs.
  • Olive oil – 40 ml
  • Garlic cloves – 2 pcs.
  • Onions – 1 pc.
  • Lemons – 1/2 pc. Salt – 1/2 tsp.
  • Ground black pepper – 1/4 tsp.
  • Puff pastry – 400 g

  • Wash and dry eggplants and paprika, brush with oil and place into preheated 200-220C oven. Bake for about 20-25 minutes until vegetables become soft. Then cool in a tightly closed container and remove the skin. Chop peeled roasted vegetables and put it into a bowl. Chop garlic cloves. Cut onions into thin rings. Add olive oil, juice the half of lemon, salt and pepper. Stir the filling.
  • Roll the dough 0.5 cm thin, place it into baking dish with low bumpers and pierce it with a fork in several places. Place it in preheated 180C oven for 5-7 minutes to dry a base. Put the filling on a base and bake about 15 minutes until the edges of the dough become light golden. It is better to cool tart before serving.
